Mock Condensed Cream of Celery SoupPosted by FootsieBear at recipegoldmine.com May 9, 2001When a recipe calls for canned cream of celery soup, use this instead.3/4 cup chicken stock1 bay leaf1 cup thinly sliced celery1 tablespoon vegetable oil3 tablespoon all purpose flour1/3 cup skim milk1 tablespoon nonfat “butter” granulesBlack pepper to taste1/8 teaspoon garlic powder1/8 teaspoon salt (optional)In a small saucepan, heat stock, bay leaf and celery uncovered, over medium high heat until liquid simmers. Reduce heat, cover and simmer 10 minutes or until celery is tender. Remove from heat. Remove celery from stock and set aside.In another small saucepan, heat oil over medium heat, add flour, stirring constantly for 1 minute. Gradually add the stock with bay leaf, milk, butter granules and pepper, stirring constantly until mixture thickens. About 2-3 minutes. Remove from heat and discard bay leaf.Pour mixture into blender or food processor, blend till smooth. Add celery, garlic powder and salt. Ice Cream Crunch Cake1 (12 ounce) package chocolate chips2/3 cup smooth peanut butter6 cups Rice Krispies cereal1 gallon vanilla ice creamWhipped cream for garnish (optional)Fresh strawberries for garnish (optional)In a large saucepan over medium heat, melt the chocolate chips and peanut butter until creamy and smooth.In a large mixing bowl, pour the melted mixture over the cereal and combine. Spread the chocolate cereal on a cookie sheet and cool. When firm, break up the cereal mixture into small pieces.Soften the ice cream and fold in all but 1 cup of the cereal mixture. Spread the soft ice cream into a 10-inch springform pan.Use remaining cereal mixture to make decorative topping, then freeze until hard. Garnish with whipped cream and strawberries, if desired. Release the side of the springform pan, slice and serve.
